Hyderabadi Chicken Biryani (Teekha)
The signature South-Indian dum biryani — spiced, raw marinated chicken layered under parboiled aged basmati and slow-steamed in a sealed pot, served with mirchi ka salan and raita. This is the "spicy" (teekha) version.

What makes it distinctive
The kacchi method is what sets Hyderabad apart: the chicken goes in raw, in its yogurt-and-spice marinade, and cooks together with the rice in the sealed pot so the juices perfume the grains. Saffron gives the top rice a golden streak, fried onions (birista) and mint give it its perfume. Ingredients
Chicken marinade
- 1 kg (2.2 lb) bone-in chicken, thighs + drumsticks (bone-in cooks juicier)
- 2 cups (480 ml) thick yogurt/curd, whisked
- 3–4 green chilies, slit (more for extra teekha)
- 1½–2 tsp biryani masala
- 1–1½ tsp Kashmiri red chili powder (or to taste)
- ½ tsp turmeric
- 1¼ Tbsp (40 g) ginger-garlic paste
- 1 Tbsp lemon juice
- ½ cup finely fried onions (birista) + the oil they fried in
- Handfuls chopped mint + coriander (divided)
- 2 Tbsp oil or ghee
- Salt to taste
Rice
- 3 cups (600 g) aged long-grain basmati, rinsed + soaked 30 min
- Water, heavily salted ("tastes like the sea")
- 2 bay leaves, 4 green cardamom, 2 black cardamom, 1-inch cinnamon, 4 cloves
- 1 tsp oil
Layering / garnish
- ½ cup warm milk + a good pinch of saffron (soaked 15 min)
- 2–3 Tbsp ghee
- Remaining fried onions, mint, coriander
- A few drops rose water or kewra water (optional)
Method
- Marinate. Whisk the yogurt; add masala, chili powder, turmeric, ginger-garlic paste, green chilies, lemon juice, half the fried onions, half the mint/coriander, salt and the fried-onion oil. Mix until every piece is coated. Rest ≥4 h; overnight in the fridge for the softest, most succulent chicken.
- Fry the birista (if not ready). Thinly slice onions; fry in oil/ghee low and slow until deep gold. Keep some out for layering. (Do this before the marinade so the oil cools into it.)
- Cook the rice to 70%. Boil heavily salted water with the whole spices + 1 tsp oil for ~5 min so the aromatics bloom. Add the drained rice; cook until the grain bends but still has a chalky core. Drain immediately. See Dum Cooking Technique.
- Layer. In a heavy-bottomed handi/Dutch oven: thin layer of rice → all the marinated chicken in a single layer → remaining rice → drizzle the saffron milk, ghee, remaining fried onions, mint, coriander, a pinch of masala, and the rose/kewra.
- Seal + dum. Seal the lid (dough ring, or foil pressed tight + heavy lid). High heat 5 min to build steam, then low heat 30–35 min. Put a tawa/griddle under the pot so the bottom doesn't scorch.
- Rest + serve. Turn off the heat; rest sealed 15 min. Lift from the bottom up (don't stir) so the marbling stays. Serve with mirchi ka salan, raita, lemon.
Pro tips
- Bone-in > boneless for kacchi — the marrow and cartilage cook up into the rice.
- Taste the marinade before it hits the pot; under-salt is the most common error.
- Fresh saffron beats food colouring. A drop of edible ittar at the very end = the restaurant aroma.
- For mutton, use Hyderabadi Mutton Biryani Kacchi (needs a tenderiser).
Troubleshooting
- Mushy rice — you parboiled past 70%. Parboil less.
- Raw chicken — marinate too short / dum too brief; bone-in + 30 min low minimum.
- Dry — not enough yogurt/ghee; add spoonfuls of warm water to the layers mid-dum.
- No aroma — stale spices; roast a fresh Biryani Masala Homemade.
Variations
- Narm (mild): swap in Hyderabadi Narm Chicken Biryani — less chili, more kewra, sweeter, for the heat-averse.
- Egg layer: add 2–3 boiled eggs, halved, into the middle layer (very Hyderabadi).
- Shortcut: do the chicken in a pakki pass (cook the gravy first) — less risky, still delicious, but you lose a notch of depth.

- Kacchi — raw marinated chicken dum-cooked with the rice. That's the defining Hyderabadi technique.
- Can I make it without a dough seal?
- Yes — foil pressed tight under a heavy lid works. What you can't do is cook it loose or keep opening the lid; the steam cooks it.
- What rice is best?
- Aged long-grain basmati (the 1121 variety if you can find it). Aged rice has less moisture and stays separate; short-grain belongs to other biryanis.
- Is this halal?
- Depends on your chicken source — use zabiha-halal meat if that matters.
