What makes it distinctive
Kacchi mutton is the hardest home biryani and the most rewarding. Unlike the chicken kacchi, mutton needs a tenderiser — the enzymes in raw papaya paste (or the traditional dried melon powder kachri) break down the fibres overnight so the flesh turns tender inside the sealed pot. Skip it and you get perfect rice over chewy meat. Aged basmati and a dough seal are non-negotiable.
Ingredients
Mutton marinade
- 1.2 kg bone-in mutton (shoulder or leg, 2-inch chunks)
- 1½ cups (360 ml) thick yogurt, whisked
- 2 Tbsp raw papaya paste (4 Tbsp grated papaya; or 2 Tbsp kachri powder)
- 1½ Tbsp ginger-garlic paste
- 1–1½ tsp biryani masala
- 1–2 tsp red chili powder
- 1 tsp turmeric
- 1 tsp garam masala
- A good pinch of saffron
- 4 Tbsp lemon juice
- 4 green chilies, slit
- ½ cup fried onions (birista) + their oil
- Chopped coriander + mint
- 2 Tbsp oil
- Salt to taste
Rice
- 4 cups (800 g) aged long-grain basmati, rinsed + soaked 30 min
- Heavily salted water + 1 Tbsp shah jeera, 4 black peppercorns, 4 green cardamom, 2 cinnamon sticks, 2 cloves
- 2 Tbsp oil
Layering / garnish
- 2 Tbsp ghee
- Chopped coriander + mint
- ½ cup warm milk + saffron
- More fried onions
- 2 boiled eggs (optional)
- Toasted sliced almonds (optional)
- A few drops rose/kewra water
Method
- Marinate overnight. Prick the mutton with a fork to help absorption. Combine mutton with papaya, yogurt, ginger-garlic, masala, chili, turmeric, garam masala, saffron, lemon, fried onions, chilies, coriander, mint, salt and oil. Coat well. Cover; refrigerate overnight.
- Fry the onions to deep gold; reserve some for layering.
- Parboil the rice to 70% in heavily salted, spiced water (shah jeera, pepper, cardamom, cinnamon, cloves + oil). Drain immediately.
- Layer in a heavy handi: half the rice on the base → all the raw marinated mutton in a single layer → the rest of the rice → drizzle saffron milk, ghee, remaining fried onions, mint, coriander, rose/kewra.
- Seal + dum. Dough ring or foil + heavy lid. High 5 min to build steam, then low 45 min (mutton needs more time than chicken). Tawa underneath to protect the base.
- Rest sealed 15 min. Lift from the bottom; serve with raita and a side salad.
Pro tips
- Papaya is the whole game. Without it, only young chicken is safe for kacchi — mutton will stay tough. Use the paste, not the powder, for strongest effect.
- Bone-in, fatty cuts (shoulder) stay juicy through the long sealed cook.
- This biryani keeps improving while it rests; the second bite is better than the first.
