Homemade Biryani Masala

What makes it matter
Commercial biryani masala sits on the shelf for months and loses its top notes. Dry-roasting whole spices right before grinding releases their essential oils and gives the "Nizam kick" that no packet replicates. Ingredients

- 20 green cardamom pods, pods split
- 2 black cardamom pods, crushed (remove inner seed)
- 1 tsp whole cloves
- 1 tsp whole black peppercorns
- ½ tsp coriander seeds
- ½ tsp cumin seeds
- 1 tsp shah jeera (caraway seeds)
- 1-inch cinnamon stick, broken
- 1 blade mace (javitri)
- 1 small star anise
- 4 bay leaves
- ¼ tsp nutmeg (jaifal), ground (optional, for Mughlai/Awadhi)
- 6–8 dried red chilies (adjust for heat)
Method
- Dry roast: In a heavy pan on low heat, add the hard spices (cinnamon, cardamoms, cloves, peppercorns, shah jeera, star anise, mace, bay leaves, dried chilies). Toast 30–45 s until fragrant and just changed shade.
- Toast the seeds: Add coriander and cumin seeds; toast another 30 s to 1 min.
- Cool: Spread on a plate 10 min. (Warm spice balls up in the grinder.)
- Grind: Pulse to a fine powder, scraping the sides. Sieve; re-grind the coarse bits.
- Store: Airtight glass jar, dark shelf. Sniff after 2–3 weeks — if it smells flat, remake.
Pro tips
- Low heat, patience. High heat scorches and turns the masala bitter.
- Dry roast, no oil — oil gums the grind and turns it heavy.
- For Awadhi/Lucknowi use more cardamom + a pinch of nutmeg, fewer chilies.
- For Sindhi/Karachi use more black pepper and add extra dried chilies.
- Make a batch of birista (fried onions) the same day — it pairs with the masala.
Troubleshooting
- Bitter masala — scorched during roast; lower the flame next time.
