Unlike the floral Kolkata aanda biryani, this dum anda is spicier and North-Indian in character — it leans on a proper whole-spice + chili masala and the crunch of crispy fried onions (birista) rather than kewra and ghee. The boiled eggs are the protein; a light potato layer is optional. It's the fastest, cheapest dum biryani in this collection and a genuine everyday dish.
Ingredients
Eggs + optional potato
- 6 eggs, boiled 10 min, peeled
- 1–2 potatoes, peeled + halved, parboiled then fried in ghee (optional)
- Ghee or oil, for frying
The masala base
- 3 Tbsp oil or ghee
- 1 large onion, sliced
- 1 tsp ginger paste + 1 tsp garlic paste
- 1 tsp turmeric, 1–2 tsp red chili powder, 1 tsp biryani masala
- 1 green cardamom, 2 cloves, a pinch of mace
- 200 g yogurt (optional)
- Salt to taste
Rice
- 3 cups (600 g) aged long-grain basmati, rinsed + soaked 30 min
- Heavily salted water + bay, cardamom, cinnamon, cloves
- 1 tsp oil
Layering / garnish
- ½ cup warm milk + saffron
- 1 Tbsp ghee
- Fried onions (birista), mint, coriander
- A few drops rose water
Method
- Fry the eggs (and potato, if using): lightly fry the boiled eggs in ghee until they get golden spots. Make a few score marks on the eggs first so masala gets inside.
- Build the masala: heat 3 Tbsp oil/ghee with the whole spices. Add the sliced onions and fry to golden. Add the ginger + garlic pastes, cook 1 min; add turmeric, chili, masala and the yogurt (if using). Cook until the oil floats.
- Nestle in the eggs (and fried potato) for 2–3 min so they soak up the masala.
- Parboil the rice to 70–80% in salted spiced water; drain.
- Layer: the egg masala base → ⅓ rice → set the eggs back on top → saffron milk → ⅓ rice + a pinch of masala → remaining rice → fried onions + remaining saffron milk + 1 Tbsp ghee + rose.
- Seal + dum: foil pressed tight + lid, low heat 25–30 min. Rest 10 min.
- Serve lifted from the bottom, with raita.

- Score the boiled eggs before frying — that's how they taste of spice, not just of egg.
- The crispy birista is the textural star; fry the onions properly to deep gold.
- Because everything is pre-cooked, this is the most forgiving dum in the collection — the steam just melds and finishes the rice.
