What makes it distinctive
A pulao (rather than a layered biryani) is the quicker, lighter route: the vegetables are sautéed in a spiced ghee base, the rinsed rice goes on top, and a measured amount of spiced water lets it all steam together in one covered pot. No parboil, no layering, no sealed dum — just a fragrant, one-pot pot of vegetables and rice. It's the everyday Deccani side that pairs with a curry or a raita.
Ingredients
Vegetable base
- 2 Tbsp ghee + 1 Tbsp oil
- 1 large onion, finely chopped
- 1 tsp cumin seeds
- 2 tsp ginger-garlic paste
- 1 cup chopped tomato
- ½ tsp turmeric
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp biryani masala
- 1 tsp garam masala
- 1.5 cups mixed vegetables, cubed (carrot, potato, peas, French beans, cauliflower)
- A handful of cashews
- Salt to taste
Rice
- 2.5 cups aged long-grain basmati, rinsed + soaked 30 min
- 3.5–4 cups spiced water (bay, 4 green cardamom, 2 cloves, 1-inch cinnamon, salt)
- ½ cup warm milk + a pinch of saffron
- Fried onions (birista), mint + coriander for garnish
Method
- Prep the veg: parboil the potato, carrot, beans and cauliflower in salted water until just tender; drain. (Peas can go in raw.)
- Build the base: in a heavy pot, melt the ghee + oil; add the cumin seeds, then the chopped onion and fry to golden. Add the ginger-garlic, tomato, turmeric, chili, coriander, masala and garam masala; cook until the tomato is pulpy. Add the parboiled vegetables, cashews and salt; mix well.
- Add rice + water: add the rinsed rice and spread it over the vegetables. Add the spiced water so it just covers the rice.
- Cook: bring to a boil, then cover tightly and drop to the lowest heat. Cook 20–25 min until the water is absorbed and the rice is tender. Don't open the lid while it cooks.
- Rest + finish: rest covered 5 min; drizzle the saffron milk; fluff; top with fried onions, mint and coriander.
- Serve with raita or a side salad.
Pro tips
- Parboil the harder vegetables so they don't turn to mush during the one-pot cook.
- Measure the water — it's the only thing keeping the rice from getting dry or mushy.
- The cashews add the Deccani richness that a veg pulao would otherwise lack.
Troubleshooting
- Mushy rice — too much water or heat too high; measure and stay on the lowest flame.
- Undercooked rice — not enough water; add a splash more.
