What makes it distinctive
The chicken stand-in for the classic Lucknowi Awadhi Mutton Biryani. Same philosophy: restraint over heat. The chicken is simmered to tenderness in a delicate yakhni, then layered with 70%-cooked rice for a short final dum. Saffron, kewra, rose water and cardamom do the flavour work — no aggressive chillies. It's the most approachable way into royal Awadhi cooking.
Ingredients
Chicken yakhni
- 1 kg bone-in chicken (thighs + drumsticks)
- ¾ cup yogurt, whisked
- 1½ Tbsp ginger-garlic paste
- 2 medium onions, sliced, fried to deep gold
- 2 tomatoes, grated
- 1 tsp biryani masala (few chilies)
- 1 tsp red chili powder
- ½ tsp turmeric
- 1 tsp garam masala
- Whole spices: 2 bay, 1-inch cinnamon, 3 green cardamom, 3 cloves, ½ blade mace
- 1–2 Tbsp ghee
- ½–1 cup water
- Salt to taste
Rice
- 3 cups (600 g) aged long-grain basmati, rinsed + soaked 30 min
- Heavily salted water + bay, cardamom, cinnamon, cloves
- 1 tsp oil
Layering / garnish
- ½ cup warm milk + saffron
- 1 tsp kewra water + a few drops rose water
- 2 Tbsp ghee
- Remaining fried onions, a little mint + coriander
- Fried cashews + almonds + raisins (optional)
Method
- Marinate the chicken in yogurt, ginger-garlic, half the birista, masala, chili, turmeric, garam masala and salt. Rest 2 h.
- Build the yakhni: in a heavy pot, melt ghee, fry the remaining onion to deep gold, bloom the whole spices 30 s, add the grated tomatoes + the marinated chicken. Stir-fry 5 min so it sears.
- Simmer with ½–1 cup water, covered, on the lowest heat 40–50 min until the chicken is fork-tender and the yakhni is rich (oil separating at the edges).
- Parboil the rice to 70% in salted spiced water; drain.
- Layer: yakhni + chicken → half the rice → saffron milk, kewra, rose, ghee, fried onions, mint → the rest of the rice → saffron/ghee/fried onions.
- Seal + dum on low 20–25 min. Rest sealed 10 min.
- Serve lifted from the bottom; pair with raita.
Pro tips
- Bone-in chicken stays juicier through the yakhni simmer than breast.
- Awadhi = fragrance. Keep the chili low and let the kewra + saffron carry the perfume.
- A spoon of khoya in the top rice adds the traditional slight sweetness.
Troubleshooting
- Mushy rice — parboiled too far.
- Dry chicken — not enough yakhni liquid; add a splash more water at the simmer step.
- Tastes flat — more salt + more saffron/kewra; mild dishes need that to shine.

FAQ
- How is this different from Hyderabadi chicken biryani?

- Do I really need kewra water?
- Strongly recommended — it's a defining Awadhi aroma. A few drops of rose water + a pinch of sugar is the closest fallback.
- Can I do this in a slow cooker?
- Yes — build the yakhni, then move to a sealed, oven-safe pot for the dum at 175 °F/80 °C for 20–25 min.
